Description

This traditional Welsh fruitcake is rich, spiced, and incredibly moist. Enhanced by brandy-soaked raisins, dried fruits, and nuts, it’s the perfect make-ahead dessert that only gets better with time.


Ingredients

  • 300 g golden and dark raisins
  • 1/2 glass of brandy
  • 200 g dark brown sugar
  • 200 g softened butter
  • 4 eggs
  • Dried plums (to taste)
  • 1 tsp ground ginger
  • 1/2 tsp ground nutmeg
  • A pinch of ground cloves
  • 1 tsp ground cinnamon
  • 1 tbsp baking powder
  • Zest of 1 lemon
  • 200 g mixed nuts (walnuts, almonds, hazelnuts…)
  • 400 g all-purpose flour

Instructions

  1. Soak the raisins in brandy for at least 1 hour (overnight is best).
  2. Cream the butter and brown sugar until light and fluffy. Add eggs one at a time, beating well after each addition.
  3. In a separate bowl, mix the flour with the spices, lemon zest, and chopped nuts.
  4. Add the soaked raisins and chopped prunes to the egg mixture, then gradually incorporate the dry ingredients until fully combined.
  5. Pour the batter into a greased and floured cake mold.
  6. Bake in a preheated oven at 160°C (320°F) for approximately 75 minutes, or until a toothpick inserted in the center comes out clean.
  7. Let cool completely. Once cooled, wrap tightly in plastic wrap and store in a cool, dry place. The flavor deepens over time.
